About:China Visa Exemption

My wife(Malaysian) and I (UK) will be traveling to Sabah Malaysia from Paris France via Shanghai

We have return tickets but there is an 18 - 20 hour stopover in Shanghai. Can we leave the airport and stay overnight on a visa obtainable at Shanghai airport. We would want to do this on the outbound and return flight.

Because your layover in Shanghai is less than 24 hours, you can enjoy the 24 hour direct transit in Shanghai. In this case, no entry permit is needed. You just need to apply for a free temporary stay permit at the airport and then you can go out and stay overnight at a hotel.
