What is the best way to travel from Hong Kong Airport to the Empire Hotel in Wan Chai?

Oh, the transportation is quite convenient. Upon landing, you can take airport express to get to Hong Kong Station first. Then transfer to free shuttle bus line H1 to your hotel directly.
