I've got a Chinese invatation letter the dates of arrival are different to when I will leave will I need a new invatation letter.

Adrian, it doesn't matter. You can fill in the application form blanks with the date shown on the invitation letter, but go there on a different date. As long as you get the visa, you can go to China anytime within its validity.
