About:China Visa

We are travelling to China in September

and doing a side trip to Thailand but returning to NZ from Bangkok via Guangzhou and in transit in Guangzhou for 3 hours only. Please confirm I do not need to apply for a multiple entry visa.
Also, as we live in Northland, is the Consulate in Auckland a safe process for me to courier my passport, forms and payment and prepaid courier envelope for the return of my passport?

I think if you do not leave the airport, just changing planes, you should not need an entry permit (especially if both flights are international and you don't go through immigration). Are you connecting with the same airline? If so, you can ask the airline, they should know.
