Sam, if you want to stay for more than 14 days, you need to apply for an entry permit in advance. Because you enjoy free entry to go there, I’m afraid you cannot apply for an extension.
You can try to exit HK first to Macau, and then re-enter HK, but I cannot assure that your request for re-entry will be approved.
As far as I know, you’d better apply for a tourist entry permit in the first place. The first step is to prepare copy of your passport, the filled-out application form, a passport-style photo, hotel reservation, flight itinerary, proof of financial support, and your travel plane. The next step is to submit the application to the embassy of PRC to apply for it.
