You may stay at Tsim Sha Tsui area. The Jing Kong City Hotel is highly recommended. It is located in Room C3, 8F, Tsim Sha Tsui Mansion, No. 83-97, Nathan Road. It costs around HKD 200-500 per night.
To Disneyland, you can take Tsuen Wan line from Tsim Sha Tsui to Lai King Station, and change to Tung Chung Line to Sunny Bay Station. Then, change to Disneyland Resort line to it. The trip takes about 40 minutes, and the fare costs HKD 19.8 per person.

For night life, the Temple Street Night Market is a nice choice. Take Tsuen Wan Line from Tsim Sha Tsui to Jordan Station, Exit A. Walk west for about 180 yards to it.
