Mexico-China(Shanghai)-Thailand

Hello,
I am travelling to Thailand/Singapore this summer, and flying via Shanghai.

I will only be in Shanghai for 8-10 hours max. I am a Mexican Citizen with a valid passport and an approved Thailand entry permit.

Mexico-PRC(Shanghai)-Thailand
Singapore-Shanghai-Mexico

How do I apply for the transit visa? Just telling my airline before departure?

Rodrigo, you can enjoy the 144h free transit policy in Shanghai on both ways and it's right that you just need to tell the airline to inform Shanghai immigration before your arrival.
