You will need a Chinese visa if you plan to visit mainland China. Technically, you can enjoy ultimate duration if you leave Hong Kong on the day permit expires and depart to somewhere and back to Hong Kong, the duration permit will start from new as treat you as "just arrive" Hong Kong. However, it is possible that the immigration officer refuse your entry if you just leave and back to Hong Kong unusual frequently.
