Where is a good location in Wuhan to take a look at the Yangtze River?

How do I access it via subway?

It's suggested to go to Hankow Marshland Cultural Park.
You can take subway line 2 to Jianghan Road Station, Exit C. Then take a taxi to the destination. The cab fare is about CNY 10 in the day time.
