Traveling logistics

Hi there, we are currently in Mexico , heading to Cuba, USA and India before China. What do you think would be the easiest way to obtain a visa? We have no been home since August and have not stated anywhere longer than a week, so no fixes address. Also do you need to know the exact date of entry to China? We know roughly what time of month, but don't have a date yet.
