Can train tickets be bought on day of travel

What is the best or cheapest way to go from Hong Kong to Xian.

You can do it on the day of departure but it is hard to say if it can be sold out. If possible it would be safer if you buy it in advance for such a long distance trup. The cheapest way maybe a connection in Shenzhen first and then go for Xian by overnight ride.
