WHat bus should I take from hong kong airport to Holiday Inn Express Mongkok?

You can take bus no.A21 at Airport (Ground Transportation Centre), get off at Sino Centre, Nathan Road. It takes around 55 mins on the way with the ticket fare is 33 HKD per person. After arriving, walk west around 330 yards (300 meters) to find the hotel.
