Can I take the free shuttle from HK station to The Excelsior Hotel then walk?

Sure. You may take free shuttle bus line H2 to the sixth stop: The Excelsior Hotel. Then, walk west for about 100 yards to the hostel. Remeber that you need to show the Airport Express Tickets or Airport Travel Pass and your boarding pass/airline ticket before getting onto the bus. ;)
