In the airport, you can take the bus No. E23 to Chi Wo Street, Jordan Road, and then walk about 500 yards, you will reach the hotel. The bus fare is HKD18, and the travel time is about 60 mins.

Thank you Ben. How about the octopus card? That is the best type of card to buy and where can we find one? Is it practical to use that instead of single journey tickets?

If you return to airport by the same bus, you are suggested to buy the Standard Octopus Card. It is widely used in this area. You can use it to take public transportation and buy things in convenient stores. You can easily buy it at many metro stations and 7-Eleven Convenient Stores. Don't worry.
If you plan to experience the Airport Express when return, then Airport Express Travel Pass would be a nice choice. You can buy one with one airport express ride and it will contain three connective days of unlimited ride on most metro lines. On the fourth day, you can top it up and use it as a normal Octopus Card. But the airport express ride will still be valid till the 14th day.

The Airport Express Travel Pass is valid in 72 hours for MTR rides once you start to use it to take metro.
Yes, this is only applicable to MTR except Airport Express Line, East Rail Line First Class, Lo Wu and Lok Ma Chau stations. It is not for bus rides.
