Visa exemption for Airline Staff travels in transit?

If I travel from USA to Vietnam via Shanghai or Beijing on a staff standby, which means I may not get on the connecting flight from China to Vietnam and may have to stay overnight either in the airport or nearby hotel. Will I need to apply for a regular type?

Yes, in this case, you'd better apply a regular one in advance. The free transit policy requires that the applicants should have prebooked air tickets.
