My flight arrives at 2:45 PM in May. Would I have time to get to, and see, the Terra Cotta warriors that afternoon?

No, your time is not enough. To check out of the airpport and head to the museum, at least two hours are needed. To enjoy a good visit, I suggest you take a shuttle bus to downtown Xian and go for it in the next morning.
