You can take Disneyland Resort Line to Sunny Bay Station and Tung Chung Line to Nam Cheong Station. Then take West Rail Line to Hung Hom Station and take East Rail Line to Mong Kok East Station, Exit D. It takes around 50 mins on the way. The ticket fare is 23.1 HKD per person. After that, walk northeast around 270 yards to find the hotel.0

The way above would help, but too many tranfers. You may also take Disneyland Line and then Tung Chung line to Lai King. Then transfer to Tsuen Wan Line to Prince Edward Station. Leave exit B1 and walk to your hotel.0
