The route that I would like to do is Beijing - Gansu/Lanzhou - Xian - Chendu - Zhangjiajie,Hunan - Guangdong - Hong Kong. Will I be able to do the whole thing by rail except Hong Kong of course ? If not, what will be your recommendation ?

I think it is not Lanzhou but Zhangye instead? Anyway, there is no hast type between Beijing to Lanzhou/Zhangye as well as your other trips. By the way, no direct rail between Chengdu and zhangjiajie, you may go via Huaihua first. And also, rail connecton available for Guangzhou to HK in fact, 2 hours trip. You can check on this website.0
