It is reported to be hot during that time (the highest temp reaches 32C/90F), with thundershower and shower on Sep. 18 and 20. On the rest days, you will have cloudy days. Generally, it is peasant to travel then. How lucky you are!
And herunder is my suggestion about the itinerary for your reference:
Sep. 18: Wong Tai Sin Temple - Kowloon Parl - Museum of HK History - Tsim Sha Tsui (I suggest so due to the weather)
Sep. 19: Ngong Ping 360 (Giant Buddha and Polin Monastery) - Disneyland Resort
Sep. 20: Ocean Park - Central Area - Victoria Bay for Symphony of Lights
Sep. 21: a side trip to Macau if you don't mind. The Ruins of St. Pauls, Monte Fort, Senado Square and Venetian are worth for a day. If time permits, also go to Rua da Cunha for nice dining.
Sep. 22: Go to Macau Tower. Thereafter, take a ferry back to HK. Go shopping at China Hk City or Ladies Street and then prepare for leaving!
