If you use the Canadian passport to enter, you have to get an entry permit in advance.

What I am not sure is whether I will be denied boarding. I am sure when I arrive in Beijing, I can use my HK ID Card and Home Return Permit to enter.

Since your HK passport is expired, you are likely to be refused to board if you don't apply for a Chinese in advance. The airlines can't take the risk if you were refused to enter by the immigration. In that case, they need to send you back to Toronto. Of course, they burden the cost.
