Unlimited mtr ride $55 in Hong Kong

Pls help, im new for this mtr cost.
We are going to HK for 5 days and on the 4th day we re planning to visit macau 1 nite and go back again for one day.
Whats the best card i use to travel inside the city? For instant we'll be staying in kowloon and going to disneyland, the peak,stanley market, lantau island , etc.

Is unlimited means i can use the octopus card cost me $55 in a day? Doesnt matter how many time i hop into mtr in one day?
