You can choose the MTR mode, but it requires many transfers:
Walk from the hotel to Shek Mun Station to take Ma On Shan Line to Tai Wa Station, and the transfer to East Rail line to Hung Hom Station, where you can transfer to West Rail line Nam Cheong Station. Then transfer to Tung Chung Station to Sunny Bay, where you can take the connecting Disney line to the resort.
