when is the interview of the italian embassy conducted after submission of documents?

Cipriani, you need to apply from the VFS. Global. They have branches in Beijing, Shanghai and Guangzhou. The interview date is fixed by the interviewee according to their schedule. So it's difficult to tell when your interview is arranged.
