You can take a train to from Ulan Bator to Beijing, and then take a connecting train from Beijing to Datong.

I found another travel agency who told me they can arrange tickets from Ulan Bator to Jining. There I can switch to a connecting train to Datong.

I think that spares me some kilometers compared to going to Beijing first :)
