In Zhengzhou or vicinity, where do I go to see the SOUTH-NORTH WATER DIVERSION CANALS?

Well, you can go east along with Zhongyuan Road, you will see this grand program soon after entering the downtown area.

Or go south all the way along South Daxue Road; you will see the canal a little south to the Souh Third Ring Road.
