What is the easiest and fastest way to travel from Hong kong to Kaiping?

The direct cross-border coach is the best way. You can catch the bus at HK-Macau Ferry Terminal, Prince Edward, Tsuen Wan, Austin Station, and Wan Chai. It takes around 4h to arrive and costs 150-170HKD.
