About:Guangzhou - Shenzhen - Hong Kong High Speed Train

Stop between departure & arriving stations

If I buy a T812 ticket : Hong Kong to Guangzhou and want to see other cities like Dongguan. Can I stop there and take another one later on to continue my journey? Can I use the same ticket?

No, once you get off during the way, ou cannot keep the trip. Also, I think this T812 do not stop at Dongguan as well. You need to book separately.

If I buy a ticket for shenzhen from hong kong in the morning and another ticket from shenzhen to guangzhou in the afternoon then in the same day i can make the trip to guangzhou. Or is there any other type of ticket from hong kong to guangzhou that allows me to do the same?

From Hong Kong to Shenzhen, you could take subway (Hong Kong Metro). Then, you could stop at Shenzhen as you wish, after that, you can take a bullet from Shenzhen to Guangzhou.
