You will need VPN to access YouTube & Google maps, Gmail, Google search, Facebook, Instagram, Twitter, New York Times, etc. If you want to watch Netflix, you need VPN that connects to the USA. It's not blocked, but you get the "Netflix hasn't come to this part of the world yet" message otherwise.
Youku is China's answer to YouTube. Bing and Baidu have maps & web search. Instead of Facebook people use WeChat. Out and about I use Apple Maps for navigation, and forward my gmail to another account. Apple maps is not as good as Google maps, however, Google maps isn't perfect. It gave me very bad directions one time (the directions said to walk over a bridge, a bridge that is car traffic only, it turns out).
VPN suggestions: Ark VPN works on my phone and tablets (a few hours free, unlimited access if you pay). Express VPN (paid only) works on my laptop, and one of my tablets. For some reason I can't get it to work on my phone but really it should. There are a ton of free VPN apps and websites, but they don't all work here.
When I'm out and about I generally don't use VPN as it's much slower. When I'm on my laptop generally I connect to VPN, but the internet is pretty slow going out of China.
