If I arrived in Hong Kong around 11 pm, is the subway stills in service?

What other bus can I take to Kowloon?

Do you refer to Kowloon Station or somewhere in that area? Anyway, I can tell you that the Airport Express MTR line is in service upon your arrival. It takes you from HKIA to Kowloon Station in around 20min. It costs 90HKD. Alternatively, shuttle bus no. A11 or E11 can take you to Western Harbour Crossing Toll Plaza, which is within walking distance to Kowloon Station.
