Early morning arriving in HK between 2am/3am

Is the MTR Customer Service open @ the Airport for my early morning arrival between 2am/3am?

Need to buy On-loan Octopus Card for my 3 days journey.

Well, the opening hours of the customer service counter are from 10:30 to 19:00 from Monday to Sunday.
So you cannot buy the card at the airport at that time.
