From HKIA to the hotel, I suggest you take Airport Express to Kowloon station and then transfer to the free shuttle bus line K3 to reachexactly. The total cost for four of you is 220HKD.

Your hotel is very close to Tsim Sha Tsui MTR station, hereunder is the transportation info to the destinations:
1. Ocean Peak: take Tsuen Wan line to Central and then walk to Central Pier no. 7 to take bus no. 629 to reach.
2. The peak: still head for Central by MTR. Then walk to the Garden Road Peak Tram Station to take the tram onto the peak.
3. Disneyland: take Tsuen Wan line to Laiking, where transfer to Tung Chung line and get off at Sunny Bay. There you can easily transfe to Disneyland Resort line to arrive.
4. Ngong Ping: almost as the way in no. 3, but you need to get off at Tung Chung Station by Tung Chung MTR line. Then walk to the cable car station to take the cable car to NP360.
5. Tsim Sha Tsui (Ladies' Market), Mongkok, Citygate and Causeway Bay are all nice places for shopping.

To HKIA from Disneyland, I suggest you take a taxi and the cost would be 100-110HKD.

Generally, it is regulated that each person has to hold one Octopus Card, but if your kid is under 3 years old, he or she can take the public transportation for free, so no card is necessary.
