can I take the MRT from Central to Sha tin in Hong Kong? and how?

Yes, you can. Take Tsuen Wan MTR line at Central and get off at Tsim Sha Tsui. Walk to Tsim Sha Tsui East to take West Rail line to Hung Hom. There you can transfer to East Rail line to Sha Tin.
