You are suggested to take airport express to Tsing Yi Station. The ticket fare is 60 HKD per adult.Then take Tung Chung Line to Sunny Bay Station and transfer to Disneyland Resort Line to Disneyland Resort Station, Exit A. After arriving, walk to the destination directly. The ticket fare is 14.5 HKD. And it will take around 25 mins on the way.
If each of you hold an Octopus Card, the train ride from HKIA to Disneyland only costs 60HKD, because you can enjoy free ride on MTR in this case.
Or you can take tourist buses at the airport. The pick-up station is located at Second Passenger Terminal. For the exact info about the bus, you can dial 852 2738 9500 to ask.
