First time travellers to HK w/alot of questions

From HKIA to Eaton Hotel, 380 Nathan Rd what would be best mode of transportation with large suitcases - directions and Bus No. would help too.
Also only in HK for 1 full day and 2nd day we board a ship in the afternoon - would a "tourist day pass" be the most cost effective pass for us? Is the HK$55 the cost to use for unlimited rides or do we have to load the card after initial purchase?
What would be the best mode of transportation for sightseeing around Kowloon/New Territories and HK Island - double decker bus? If by bus, I guess the day pass wouldn't work as it doesn't include MTR Bus - what would be best pass in this case - Octopus card I would imagine?
Is train all underground?
Are there any areas for foreigners that aren't safe day/night - recently saw episode of "Scam City" about Temple Street area - prostitution/gangs/ladyboy scams etc... Not paranoid but cautious and any advice is welcome.
Any recommendations on affordable delicious restaurants for dinner and/or breakfast?
What is name of tallest building with bar at top? Can anyone go up for a drink - this was recommended to do for the view - best time night or day - is there a dress code?

1. to Eaton Hotel: you can take the airport express to Kowloon. And then take free shuttle K1 to the hotel. Or you can take bus A21 from the airport, and get off at Nathan Hotel, Nathan Road, and then walk about 130 yards to reach.
2. Tourist One Day pass would be a good choice for you. For 55HKD, you can use it for 24 hours unlimited ride. You don’t need to pay more.
3. The tourist day pass cannot be used in buses. If you want to take bus also, I suggested you just buy octopus card.
4. Most trains run in the underground, but there are still several stations on the ground.
5. Most of the places in HK are safe enough for tourists, for HK has good public order. Just be careful when you go anywhere. Besides, avoid hanging out alone in mid night.
6. There are many different kinds of delicious food in there; you can taste them one by one when you arrive. The tallest building there you can go to is Sky 100 HK Observation Deck. In the top of it you can view the whole scenery of HK and have a meal in Visa@sky100 Restaurant. Both day and night are ok, they will give you different feelings.
Wish you have fun!
