Me and a friend visit a chinese buffet very regularly.

Would it be respectful or odd if we learned a few phrases in chinese to say thank you or other customer etiquete?

Miles, you may say Xie Xie (谢谢) in Chinese to thank the waiter. If the dishes are delicious, you may say Zhen Hao Chi (真好吃). If you want to thank your friend for inviting you to join the dinner, you can say Xie Xie Ni Yao Qing Wo Yi Qi Xiang Yong Wan Can (谢谢你邀请一起享用晚餐).
