if I submit my document for visa on Tuesday can I be interviewed the same day?

Usually, the interview will not be on the same day you hand in the application documents. After you sumbit all the documents, you can get a receipt and interview time is printed on the receipt.

There is no embassy in Lagos any more. If the invitation letter is for the Chinese embassy, you can use it in Abuja, where the new embassy locates.
