About:72-Hour Visa-Free Transit

Where do I apply to be exempt from the travel visa? And will I need to apply for the exemption twice

Hi, I was planning on stopping by Shanghai for ~2 days and then flying to Korea. Seeing as how I have a Canadian passport and am traveling from Canada->USA->Shanghai, I am eligible for the free transit. I will also be flying from Korea to Shanghai and staying another 1-2 nights before departing to USA -> Canada. Will I have to apply to be exempt twice? And if so, where do I get the applications? Will I receive the application while I'm in the US airport? And when returning, will I be getting the application while I'm in the Korean airport?

I was also wondering if I would have to apply for one anyway just in case the application for the free transit is denied for whatever reason.

You can apply to be exempt at Shanghai airport twice on your both trips.
You want to enjoy the 72-hour free transit, right? If so, you need to tell the airline that you want to enjoy this policy when boarding. Then upon landing, there is a 72-hour free transit counter at the immigration and the application should be done there.
