If you just stay there for two days, you can apply On-loan Octopus Card.
If you want to buy it, you can go to the MTR Customer Service Centres, Light Rail Customer Service Centres, KMB Customer Service Centre, New World First Ferry Octopus Card Service Centres, or New World First Bus Customer Service Centre. BTW, a card can only be used by one person. The elder 66 years old can obtain an elder card with his passport.
If you start the journey from Tsim Sha TSui, I suggest you go to the Disneyland first, from there to Ngong Ping, and then to City Gate.
From Tsim Sha Tsui MTR Station to Disney, you’d first take Tsuen Wan Line to Lai King, transfer to Tung Chung Line to Sunny Bay, from there you can take the Disneyland Resort Line to Disney directly.
From Disney to Ngong Ping, firstly take Disneyland Resort Line to Sunny Bay, transfer to Tung Chung Line to Tung Chung, Exit B. Near the exit, there are bus stations and cable car, you can take them to there.
Ngong Ping and Citygate are located near each other; you can reach there by taxi.
From Tsim Sha Tsui to the Ocean Park, you can take Tsuen Wan Line to Almiralty, of the exit B across the road, you can take bus 629 to its terminal. Then you’ll easily see the main entrance of the park. (the Admiralty MTR is closed these days, but I guess it will open a few days later. If it is still closed in Dec. you can take a taxi to there.
