panyu square to guangzhou airport south

If I am going from Panyu Square to Airport South (return), on the North-South Branch Line 3, do I need to change trains at West Tiyu Road? or is the North-South Branch always the same train?

Yes, you are right, you need to get off at West Tiyu Road. Then transfer to another train on the opposite of the platform. Still the subway line 3 and you don’t need to get out of the subway station or buy the tickets.
