1. Take peak tram down to Garden Road and then walk to Central to take Tsuen Wan MTR line. You need to get off at Tsim Sha Tsui. Then you can easily walk to the Avenue of Stars. And this avenue is the best place to enjoy the Symphony of Lights.

After watching that, walk to Tsim Sh Tsui to take Tsuen Wan line to Jordan. Leave exit A and you can easily walk onto the Temple Street Night Market. For the back journey, you should tell me your exact destination.

2. For your itinerary, here is my general suggestion:
Day 1: the peak - Avenue of Stars - Victoria Bay for the symphony - Temple Street Night Market
Day 2: Ngong Ping 360 for Big Buddha and Po Lin Monastery
At night, go to Causeway Bay to have local snacks.
Day 3: take a ferry to Macao. Then you can see these attractions: Fisherman Wharf - Macao Tower - Senado Square - the Ruins - City of Dreams
MAY HELP!
