Do I need a multi entry visa or a single one

I am planning on travelling to Hong Kong first for 1 night, then Beijing for 3 nights before going back to Hong Kong for another 5 nights. Do I just need a single entry one?

Also do I need a Invitation letter for my application or is a round trip ticket Hong Kong / Beijing / Hong Kong as well as a hotel reservation in Beijing sufficient for application to be granted.

A single entry is enough.
If you can provide your hotel booking and round trip tickets, you do not need to provide an invitation letter.
