I'm staying at sha tin Hyatt regency wish to know how to I go to Hong Kong Disneyland by MTR

It requires several transfers on the way by MTR. Well, walk from your hotel to University MTR station to take East Rail line to Hung Hom, where transfer to West Rail line to Nam Cheong. Then you need to transfer to Tung Chung line to Sunny Bay and change to Disneyland Resort line to the park. The whole journey takes around 65min and the fare is 25.2HKD per person.
