Does every family member need to apply in person or just one of the parents to apply for 4, when applying?

Greetings!

We're visiting China during 7/28 - 8/19 and need to apply for visas for our family of four, parents and two children. Since we have new passports and no records for prior visit in China, do all four of us need to come in person to apply? Or just myself, the mother can come in person and apply for the family? Please let us know.

You can apply for your family and you need to prepare all the documents they required to right consulates general.

In addition to passports, itinerary and application forms, what else shall I bring to the embassy to apply for the visas?

If this itinerary is from a travel agency, then that is enough. Otherwise, you should provide round-trip ticket and hotel booking.
