When traveling to China, is there a maximum amount of US dollars I can carry into the country?  My intent is to convert the US dollars to RMB when I arrive.  When I depart, is there a limit to the amount of RMB I can convert back to US dollars

You are allowed to take into no more than 5,000USD into China and the amount is the same when you leave China. When you have to take more cash out of China, you need to get a paperwork/proof from the bank I remember!
