From your hostel, you can walk the Fortress Hill Station to take the Island Line to Central Station. Then walk to the HK Station to take the Tung Chung Line to Tung Chung Station.
Get out of the station from Exit B and you can find the Ngong Ping 360 Station. Go to take the Ngong Ping Cable Car to reach the Ngong Ping Town. Then walk to the Big Buddha directly.0
