About:Shanghai Railway Station

Also asking about stations for Shanghai and Beijing

Which station does the fast train leave from in SH and which one does it arrive at in Beijing.

I am staying near the main railway stations in each but am confused by this.

For the fast train, do you mean the bullet trains?
If so, most of the bullet trains leave from SH Hongqiao Railway Station and reach Beijing South Railway Station.
If you mean the T-train, T110, it leaves from SH Railway Station and reach Beijing Railway Station.
