Here is my suggestion:
D1: Ngong Ping 360/Giant Buddha - Disneyland Resort
D2: the peak - Tsim Sha Tsui (Avenue of Stars, China Harbior City and Victoria Bay) - Temple Street Night Market

You can easily take a ferry at China Ferry Terminal or HK-Macaso Ferry Terminal to Macao!
