What transport to take from Prudential Hotel @ Nathan to HK Airport to catch 7.00am Flight,

I think you can take the bus line N21 from Jordan Station, Nathan Road to reach the airport directly.
The last N21 starts at around 05:10 from Hung Hom, so you need to pay attention to the bus schedule in advance to make sure you can reach the airport in time.
