Where do I pick up the HK Airport shuttle to go to Metro Park Hotel Kowloon. Is it train then bus

You mean you want to take the airport buses or use the free shuttle buses of airport express?
If you mean you want to use the free shuttle buses of the airport express, you may need to take the airport express from the airport to Kowloon Station and then change to the free shuttle bus line K5 to your hotel directly.
The airport mtr station can be found by following the direction boards in the airport.
