As I know, there are only two ordinary fast trains running for the journey. It takes around 12-14h and the bus ticket is CNY102-130 for a hard seat, CNY190-239 for a hard sleeper and CNY285-355 for a soft sleeper.
If u wanna make the trip more sufficient, I suggest u take a high-speed train from GZ to Shenzhen first and then transfer to another high-speed train to Xiamen. The whole rail trip takes around 5h.2
